The Muffin Man

Oh, do you know the muffin man,
The muffin man, the muffin man,
Oh, do you know the muffin man,
That lives on Drury Lane?

Every time I see Muffins! I will surely be singing or humming this nursery rhyme song.  For me, nothing beats the wonderful blueberry muffins – these moist, full of juicy blueberries with beautiful golden brown crust are absolutely delicious and more amazing than I can describe.  But, since I’m a coffee lover, coffeecake muffins with crumb topping and iced drizzle definitely runs a super close second and tied by the corn muffin. These muffins are pretty much the equivalent of dessert for breakfast, especially when they are made of really healthy ingredients.

The name ‘Muffin’ either may have come from the French word ‘moufflet’, which means soft bread, or from the German word ‘muffe’ meaning a small cake or ‘muffen’ plural of muffe. In 1703, the name was first found in print which was spelled moofin.

English muffins are made of yeast dough, cooked in rings, cooled then split, toasted and topped with butter or jam. English muffins are also used as breakfast sandwiches with meat such as bacon, ham or sausage and usually served with eggs and cheese. The American-style muffins on the other hand are made using a chemical leaver such as baking powder or baking soda, making it a cross between bread and a cake. The bread-like muffin is made with less sugar and butter; while the cake-like muffin has higher content of sugar and butter. The American muffin is usually symmetrical with a domed top; while Australian and Swedish baker uses taller paper cases with a larger diameter at the top.

Some of the all-time favourite muffins are:

  • Blueberry Cornbread muffin – this muffin is among one of my favourite, it has a delightful flavour with a crunch of cornmeal and bursting with fresh blueberries.
  • Orange-Pineapple muffin – made of crushed pineapple and orange zest, this muffin gives a wonderful citrus flavour with toasted pecans adding a nice crunch.
  • Bread Pudding muffin –a great way to use leftover bread, soaked in cinnamon flavoured milk with apple chunks and raisins.  Warm, spiced and full of wonderful flavours; perfect muffins to serve over the holidays.
  • Strawberry-Banana muffin –made of mashed bananas and bite sized fresh strawberries, when combined, these are the two sweet fruits which go well together.
  • Chocolate Chip Muffins – who can say ‘no’ to chocolates for breakfast; smell and savour these chocolate chips in a moist, buttery, vanilla scented muffin and sprinkled with cinnamon sugar as toppings.
